Steve uses this spoon daily, to perfect the teas that bear his name. Joined by trusted cohorts from his previous tea adventures, such as Tazo, he lovingly crafts each small batch of Smith in his Teaworks atelier in Portland, Oregon.

PREPARATION

For best flavor, bring freshly drawn filtered water to 190 degrees. Steep three minutes. Use an official Smith sundial to be sure of absolute accuracy and play a spot of bridge or mahjong to help pass the time.

INGREDIENTS

Fez: Spring harvested full leaf Mao Feng China green tea, Pacific Northwest spearmint leaves and Australian lemon myrtle.

White Petal: China white full leaf tea, Chinese osmanthus flower, Egyptian chamomile petals and natural flavors.

Mao Feng Shui: Spring harvested full leaf China green tea.

Jasmine: China full leaf green tea scented with jasmine blossoms.

Brahmin: Second flush Indian Assam, Ceylon Dimbulla, Ceylon Uva and China Keemun full leaf teas.

Kandy: A blend of Ceylon Dimbulla, Uva and Nuwara Eliya full leaf teas.

Lord Bergamot: Ceylon Dimbulla, Uva and Indian Assam full leaf teas and natural bergamot flavor.

Big Hibiscus: Hibiscus flowers, Indian sarsaparilla root, ginger root, natural flavors, rose petals, elderflowers and lemon myrtle.

Meadow: Egyptian chamomile, South African rooibos, fragrant hyssop, linden flowers, lemon myrtle, rose petals, safflower, cyani flowers and natural flavors.

Peppermint:Peppermint leaves from the Pacific Northwest.

Red Nectar: Rooibos and honeybush from South Africa and natural fruit flavors.
